Recipe: Beef Nachos for Cinco de Mayo!

In honor of Cinco de Mayo I'm posting one of my kids' favorite recipes. The love beef nacho night. Believe me, this recipe is nothing fancy. You can add (or leave out) whatever toppings you want to make it your own. The brown rice and corn turn it into a filling meal.

Judy's Beef Nachos
1 lb (or more) lean ground beef
1 taco seasoning packet
1 1/2 cups cooked brown rice
2 cups kernel corn
1 - 1 1/4 cups water
Shredded cheddar
Sour cream
Tomato, lettuce, etc.
Tortilla chips

Prepare rice and set aside (cover to keep warm). Brown ground beef in skillet, drain to remove fat. Add water and taco seasoning to beef and heat in skillet. Add rice and corn and stir until everything is heated through. Serve on plates with cheddar cheese, lettuce, tomato, sour cream, etc. Scoop it up with the tortilla chips. Serves 6-8.
