I got this recipe from an online friend who I haven't seen or heard from in years. It's one of my favorite summer desserts. I like to make it for family gatherings (I usually make two for my big extended family!). It's cool and sweet and low fat. At one time I had the Weight Watchers points figured out for this. I think it was about 4 points a serving, but don't quote me on that. The points were figured using lite Cool Whip. Not bad for a slice of sweet indulgence. I make this the day before I plan to serve it so it can chill overnight.
Low Fat Strawberry Pie
1 1/2 cups water
2 tbsp cornstarch
1 - 3 oz package sugar free strawberry Jell-O
4 packets artificial sweetener (I skip this ingredient)
3 cups sliced strawberries
1 graham cracker crust
whipped topping
Bring water and cornstarch to a boil in saucepan. Simmer until thickened. Add gelatin and sweetener, mix well. Remove from heat and let stand to cool. Stir in strawberries. Spoon into pie shell. Refrigerate. Slice and serve with whipped topping. Serves 6-8.
