Recipe: Homemade Ice Cream Cake

Adam's 14th Birthday

Homemade ice cream cake has become a birthday tradition in my house. My kids' birthdays are in May and July so ice cream is a welcome treat (actually, ice cream is an everyday snack in my house but we're always up for more!).

Why buy a Carvel or Friendly's ice cream cake for 20 bucks when you can make your own for a quarter of the cost? And you customize the flavors too!

Homemade Ice Cream Cake
Crust
1 1/2 cups graham cracker crumbs (you can also use cookies)
1/3 cup melted butter
3 tbsp sugar

I crush the graham crackers by putting them in a large ziploc bag and rolling over them with a rolling pin. Mix the cookie crumbs, sugar and butter. Press into a glass baking dish. 11x7 rectangle works perfectly for me. Bake at 350 for 10 minutes. Let cool.

Filling
Soften a half gallon of ice cream. Let it sit on the counter until it's spreadable (be careful not to let it get soupy). When it's soft, spread the entire half gallon over the cooled crust. Freeze for a couple of hours.

Spread a layer of whipped cream over the ice cream and decorate with sprinkles, nuts, etc. Freeze again.

See how easy peasy it is? You can even play around by adding extra layers of nuts, cookie crumbs, chocolate sauce, maybe even peanut butter!
