Recipe: Poke Cake

I remember my mother used to make this when I was young. Back then we called it Jell-O cake. It's such a simple recipe to make and it's great for summer gatherings. I plan to bring this to my sister's 4th of July family picnic next Sunday.

Cake:
1 pkg. (2-layer size) white or yellow cake mix
1 cup boiling water
1 pkg. (4-serving size) Jell-O gelatin 
1/2 cup cold water

Frosting:
1 cup Cool Whip
1 pkg (4-serving size) instant pudding
1 cup milk

1. Prepare cake batter and bake as directed on package for 13x9-inch baking pan. Cool cake in pan 15 min. Pierce cake with large fork at 1/2-inch intervals.

2. Stir boiling water into dry gelatin mix in small bowl 2 min. until completely dissolved. Stir in cold water; carefully pour over cake. Refrigerate 3 hours.
3. Prepare frosting: Mix pudding mix and milk with mixer. Stir in Cool Whip. Frost cake with topping. Refrigerate at least 1 hour before serving. Store leftovers in refrigerator.

The frosting in the photo is plain Cool Whip. I prefer the creamy pudding frosting but you can frost yours with whatever you like. Lighten up the recipe a little by using fat free sugar free Jell-O gelatin and pudding and lite Cool Whip.

Love that "punch cake" Me and my mom made like 100's of those years ago when we used to do a lot of church dinners. It was a favorite dessert. It orginated at our church from a luncheon we had put on in 1980something!. We had the recipe from one of the ladies and thought it would be light and refreshing. I was using lemon cake and lime jello. The ladies and gents of the church LOVED it and we, from then on, and to this day call it "luncheon cake" LOL. Thanks for the thoughts down memory lane. I can almost taste one now. Maybe I'll bake one soon!

thanks for sharing judy!! ive always wanted to try this with a real recipe :) (ive always just tried to make it up, and its never worked out quite right... lol)
