This recipe comes from a cookbook called Company's Coming Slow Cooker Recipes by Jean Pare. I found the book at a local closeout store for only $3.00. I love to throw the ingredients in the crock pot first thing in the morning, then forget about it. The longer it cooks, the better it tastes!
Slow Cooker Chicken Stew
4 medium potatoes, cut into bite size chunks
4 medium carrots, cut into bite size pieces
1 1/4 cups chopped onion
1.25 boneless chicken (the recipe calls for thighs or drumsticks but I use breasts)
2 cups hot water
1 tbsp. chicken bouillon powder (or 3 cubes)
1 tsp salt
1/4 tsp pepper
1/4 tsp ground thyme
1/2 tsp liquid gravy browner
Layer potato, carrot and onion in 5 quart slow cooker. Lay chicken on top.
Stir next 6 ingredients together in bowl. Pour over chicken. Cover and cook on low for 9-10 hours or on high for 4 1/4 - 5 hours. If you want the broth thicker, mix a few tablespoons of flour with cold water and stir in during the last half hour. Serves 6-8.
