Every summer we spend a weekend in the White Mountains with my sister's family. We bring our own food and my sister and I take turns preparing the meals. One year I decided to do a simple meal of burgers on the grill with potato salad. I wanted red potato salad. Don't ask why, I just did. I found this recipe on the Taste of Home website.
Let me just say it's fabulous.
The recipe makes more than 6-8 servings so I only prepare it for a crowd. My daughter and I are the only potato salad eaters in my house so it would go to waste if I made it for us. It's always a big hit at my son's Boy Scout pot luck dinners. There's never anything left to take home.
I substitute regular mayo for the Miracle Whip and plain Greek yogurt for the sour cream because that's what I keep in the house. I leave the skin on the potatoes and I skip the radishes because I think they're yucky. I prefer to let it chill overnight so all the flavors can blend together.
3/4 cup sour cream
1/2 cup Miracle Whip
2 tablespoons herb or white vinegar1-1/2 teaspoons salt
1 teaspoon celery seed
6 medium red potatoes (about 2 pounds), peeled, cooked and cubed
3/4 cup sliced green onions
1/3 cup sliced radishes
1/4 cup chopped celery
3 to 4 hard-cooked eggs, chopped
In a small bowl, combine sour cream, mayonnaise, vinegar, salt and celery seed; set aside. In a large bowl, combine potatoes, green onions, radishes, celery and eggs. Add Miracle Whip and toss lightly. Cover and chill. Yield: 6-8 servings.
